The three new flavors this winter (Cashew Caramel Crunch, Pistachio & Tart Cherry and Tart Cherry Caramel) were inspired by the Fruit and Nut Masterclass I took this past September. So, you are really getting the 'fruits of my labor'!
Now this was a challenge (but I think I got it)! If you are not familiar with a flavored caramel, this will truly be a treat. I started with frozen tart cherries (wondering why 'frozen'? - they are picked at their peak flavor and flash frozen so they can be used anytime of the year). After thawing, I cooked them down to concentrate the flavor as much as possible - and did they pack a punch! - and made a puree. I then developed a recipe that balanced both the caramelization of the sugar in a traditional caramel with the tartness of the cherries. What a great way to celebrate the season!
