I'm still playing with some of the ideas sparked by my Fruit and Nut class last fall. I really like the flavor of Raspberry and wanted to try my hand at a Raspberry Caramel - here (literally) is the fruit of my labor!
I started with . . . raspberries! I cooked them down to concentrate the flavor, made a puree and strained out the seeds. With the tart, crisp flavor of the raspberries, I made a caramel (soft, not chewy or sticky) and piped it into a chocolate shell - refreshing and delicious!
